Why scoop-and-pack gives the wrong answer

When you push a measuring cup into a bag of flour, the flour packs in. A scooped cup of all-purpose flour weighs 130 to 145 grams. The recipe writer almost always meant 120 grams. You end up with 10 to 20 percent too much flour, which is enough to dry out cookies, toughen muffins, and shrink a cake.

The fix is two parts. First, fluff the flour in the bag with a spoon. Second, spoon the flour into the cup, then level the top with the flat side of a knife. No tapping, no shaking. The cup ends up around 120 grams, the number recipes assume.
