Ounces of weight, not ounces of liquid

An ounce is a unit of weight. A fluid ounce is a unit of space. They share a name but they are different things.

For water, 1 fluid ounce weighs about 1 ounce, by chance. For other foods, the two numbers are different. Honey is heavier per fluid ounce. Oil is lighter. Always check whether your recipe means weight or fluid.

Other weight units to know

1 pound is 16 ounces or 454 grams. 1 kilogram is 1000 grams or 2.2 pounds. Most kitchen scales switch between ounces and grams with one button. Pounds rarely show up in baking; recipes usually give either ounces or grams.

Common ounce and gram mistakes

  • Confusing ounces (weight) with fluid ounces (space). 1 fluid ounce of honey weighs about 1.4 ounces.
  • Using one cup of food as one weight ounce. Cups measure space, not weight. They are not the same.
  • Rounding 1 ounce to 30 grams. The real value is 28.35. The 6 percent difference adds up in a recipe with several ounces of an ingredient.
  • Mixing US weight ounces with troy ounces (used for precious metals). Troy ounces are heavier, but they do not appear in cooking.
